I’m a self-confessed sweet treat lover – if it has sugar, I’m into it! But while those quick-fix sugar high’s will give you a burst of energy, for something more long-term I look to more natural sweet treats like these homemade peanut butter cookies. Totally moreish and delicious – these will become a staple in your baking repetoire!
Ingredients:

- 1 tbsp soft butter
- 8 tbsp chunky peanut butter
- 2tbsp maple syrup
- ¼ tsp bicarbonate of soda/ ¼ tsp sea salt
- ¼ ground cinnamon/ ¼ vanilla extract
- 100grams ground almonds
Method:
- Use a fork to mix together butter, peanut butter, maple syrup, bicarb soda, cinnamon & vanilla
- Fold in ground almonds & mix well
- Put in the fridge for 30 mins
- Preheat oven to 160 Degrees Celsius (fan 140 Degrees Celsius)
- Scoop a ball & press down on each cookie with a fork
- Bake for 15-20mins & allow to cool
