I’m a self-confessed sweet treat lover – if it has sugar, I’m into it!  But while those quick-fix sugar high’s will give you a burst of energy, for something more long-term I look to more natural sweet treats like these homemade peanut butter cookies. Totally moreish and delicious – these will become a staple in your baking repetoire!

Ingredients:

Peanut Butter Shortbread Cookies

Method:

  1. Use a fork to mix together butter, peanut butter, maple syrup, bicarb soda, cinnamon & vanilla
  2. Fold in ground almonds & mix well
  3. Put in the fridge for 30 mins
  4. Preheat oven to 160 Degrees Celsius (fan 140 Degrees Celsius)
  5. Scoop a ball & press down on each cookie with a fork
  6. Bake for 15-20mins & allow to cool
