Sourdough Bread

Ingredients

  • 500g flour
  • 100g starter
  • 300g water
  • 10g salt

Method

  • Put all ingredients in a bowl and bring together with hands
  • Turn out onto floured surface and knead dough for 10mins
  • Place in bowl with cling film on top for 2-3hours and leave to rest at room temp
  • Turn dough out and lightly knead and shape again
  • Put dough into lightly oiled bowl with cling film on top and leave bread to prove overnight in fridge 
  • Take out of bowl next morning and lightly knead/shape again to remove air bubbles (knocking it out)
  • Leave to rest, warm up and double in size. This should be 2/3hours in bowl or bread proofing basket (with flour in it), cover top with cling film lightly
  • Turn bread out onto baking paper
  • Put scores at top of bread with a knife for a crust to develop in oven
  • Heat oven to 240 and place dough in a ovenproof dish that has a lid (if not just directly on a tray)
  • Bake for 40-45mins
  • Remove lid and reduce to 200
  • Bake for another 10 or longer to allow the crispy crust to develop
